Few people have asked for this recipe. Simple mid week meal. Serve with lots of butter mash, gravy and some seasonal veg.

Oven 180c

Ingredients

1 kilo good quality beef mince

1 carrot grated

1/2 courgette grated

1 onion finely chopped

1 stick celery finely diced

1 egg

1 tsp garlic powder

1 tsp oregano

1 tsp thyme

salt and pepper

ketchup

handful bradcrumbs (I never weigh)

 

1. Sweat of onions and celery in a little oil and butter until softened.

2. In a large bowl add all ingredients and mix well together. Ensure you season well.

3. You can either free form meatloaf or use a bread pan. I use a bread pan and line with aluminium foil.. as you get caramelised bits that can be a pain to clean. Place meat mix in pan and squish down so evenly distributed. Brush entire top with ketchup. Maybe 1-2 tbls worth. Pop pan on a baking sheet and into preheated oven. Cook 45-1 hr. till Centre temp reads 65-70c. Allow to rest 10 min before trying to slice.
