This is a super easy recipe for ragu. The oven does the work. Low and slow. Pigs cheeks can be ordered from your local butcher. 4 cost me £4.80
oven 140c
4 pork cheeks
1 carrot diced
1 onion diced
2 stalks of celery diced
5-6 sprigs of Thyme
Bay leaf
1 carton passata
Red wine
salt & pepper
1. Season. Pig cheeks. Sear pig cheeks, on all sides in hot fry pan. Transfer to a heavy pan (with lid). Deglaze fry pan with red wine and add this to the heavy pan. Add all other ingredients to pan. Give a good stir. Pop lid on and into oven.
2. Check after 2 hrs. Test tenderness of pork.. it should be fall apart soft. Add a little water if sauce getting to thick. Pop back in oven for another 2 hrs.
3. In the heavy pan shred your pork. Take a potato masher and mash the ragu. Test the seasoning and add desired salt & pepper. It is ready for serving
