As a family we are eating mutton much more. It has such an amazing flavour,One issue that has come up in chats is that it can be a little tough. Well that is where a Sousvide (water bath) works so well with mutton. Retains it colour, doesn’t over cook and breaks down the meat so it’s fabulous and tender.

This recipe is super simple. A friend of mine, Hamesh, makes some fabulous spice blends. He will be launching Mr Wolf Urban Spice Man very soon. So I helping out and creating a few recipes using his blends. Keep an eye out on his Twitter Page and website to go live soon 

For this recipe I used Peaceful Turk. Glorious mix of 16 herbs and spices including mint, dill, sumac & hibiscus flower to name a few..

Ingredients

2 mutton necks

2 tbls Peaceful Turk spice mix

1 red pepper

1 courgette (quartered)

1 red onion (quartered)

1 lemon

250g couscous

400 ml veg stock (hot)

Salt and pepper

knob of butter

handful of mint

Method

Preheat Sousvide to 60c

1. Rub the necks with Peaceful Turk spice mix. Vac pack and place in Sousvide. Cook in water bath 6-8 hrs.

2. Rub pepper, onion and courgette in oil and pop in preheated 170c oven and roast till they soften. Remove skin from pepper.   Reserve any juice (use in couscous). Dice all veg.

3. In a large bowl add couscous, lemon zest and veg stock. Season. Cover and let stand for 5 minutes. Finely chop mint and juice the lemon.

4. Fluff the couscous with a fork. Add in diced veg, mint and lemon juice. Mix well. Check seasoning and adjust accordingly.  Set aside until needed.

5. Remove Necks from Sousvide. When you open bag pour the juices into the couscous. Heat pan with butter. Sear necks on all sides. Season with salt and pepper. Allow to rest 5 minutes before slicing.

Thats it.. couscous in a bowl, mutton on top. Little drizzle of olive oil and sprinkle fresh mint. All the family loved this. Super tender, fabulous flavour and very healthy 👍👍
