Created this recipe as something I could just chuck in the crock pot and simmer all day. Super easy and fantastic flavour. Welsh Lamb is amazing and lamb neck is a fantastic cut for braising. Lovely and sweet. Make a big batch and Freeze any leftovers.
Ingredients
4 Welsh Lamb Necks (slice in big chunks)
1 red onion (diced)
2 cloves garlic diced (mine were large so what you like)
1 can chopped tomatoes
2 Tbls Tomato Puree
250 ml chicken stock
Handful chopped herbs – oregano, thyme, parsley
Handful chopped basil (do just before serving)
100 ml red wine
salt & pepper
Method
1. Warm up crockpot on low setting. Heat a fry pan. Season meat. Add a little oil to pan and sear the lamb on all sides. Deglaze the pan with wine. Pour all of this into crock pot.
2. Add onion, garlic, tomatoes & paste and the mixed herbs to crock pot. Pour in stock and stir. Cover and leave 6 hrs or so.
3. Take out any excess juice and put in small pan. Reduce this by half. Taste and season according. In meantime with potato masher smush the meat and veg. Return reduction to meat. Make your pasta. Just before serving stir through the basil.
and that’s it! Toss through your pasta and lots of Parmesan. Super easy and plates will be left clean!
