I was contacted a month or so ago to help test a recipe from Chef Mick Elysee’s new cookbook. After talking over the recipes with the children we decided on this one. Have to say it was a huge hit. Can’t wait to try some more of his recipes. The book is called Not Guilty.
Ingredients
2 crocodile fillets
1/2 lemon juiced
1 shallot
1 red onion
2 cloves garlic
1 tsp. Cayenne pepper
1 tsp. Nutmeg
1 tsp. Mustard
1 tsp. Powdered Ginger
Salt and pepper
1 lime cut in segments
Method
1. Dip the skewer sticks in a glass of cold water for about 10 min.
2. Cut fillets into small cubes, finely chop garlic, onion and shallot. Mix in bowl with mustard, lemon juice and spices. Skewer the crocodile cubes with sticks and set aside.
3. Preheat 3 tbls of olive oil in frying pan and cook the sleeves 4 min each side.
4. Squeeze half lime over skewers when serving. Serve with extra lime segments.
I wouldn’t begin to know where to find crocodile but I’m glad they were a hit with your family! ❤
