We love Ribs! This is my basic recipe to get them super tender before putting them on the BBQ or in the Smoker.
Pork ribs are an inexpensive cut and the usually cost less than £5 for a whole rack from my local butcher. If you can leave rub on overnight but they will be just as fine rubbed and popped in the oven. Key is low oven and slow cooking. I put double layer of aluminium foil to cover. This way i get a tight seal, keeping the meat nice and moist.
Preheat oven to 140C
Rub
1 Tbls sweet smoked Paprika
1 Tbls Granulated garlic
1 Tbls dried Oregano
1 Tbls ground Cumin
1 Tbls ground coriander
1 Tbls Brown sugar
1 Tsp cayenne Pepper
As you can see the rub is rather straightforward. Adjust to your taste. I try not to make it to spicy for the children and will add a spicier sauce for adults when its grilling time.
Combine all ingredients together and when ribs are at room temp, rub the mixture liberally on both sides. working it into the meat. At this point you can wrap and pop in the fridge overnight. Otherwise place in large deep baking tray. Cover with aluminium foil and ensure sealed well. Pop in the oven for 3 hrs. Half way through cooking, open and baste the juices over the top and reseal and return to the oven.
Once cooked they are ready for sauce and the BBQ or Smoker. If I BBQ i tend to do 15 min each side to caramelise the meat. If going in the smoker I tend to smoke for 3 hours and then finish on BBQ as above.
